Sunshine sipping has arrived – hurray! We have collected the team’s favourite punchy and fruity cocktail tastes for the sizzling summer get together ahead.

Pina Colada

The iconic creamy and sweet creation always transports us to memories of white beaches, sun cream and poolside tropics. It’s easy to make too, so you can guarantee this will be a quick people pleaser you can perfect at home!

 

You’ll Need:

  • 20ml pineapple juice
  • 60ml white rum
  • 60ml coconut cream
  • wedge of pineapple, to garnish (optional)

Method:

Blend all the ingredients together along with a handful of ice in an electric blender until smooth. Pour into a tall glass and garnish as you like! Serve with an umbrella to really up the pizzazz factor.

Peach Margarita

You can’t go far wrong with a tempting taste of peach schnapps. This is one fruity cocktail we’ll be making for every girly get-together throughout the summer. The combination of real fruit and fruity liqueur really give this cocktail a beautifully sweet almost dessert taste without sacrificing booziness.

You’ll Need:

  • 1 small peach , peel and roughly chopped
  • 60ml tequila
  • 30ml peach schnapps
  • 20ml lime juice
  • Lime wheels or peach slices, to garnish

 

Method:

Blend the chopped peach until smooth. Rub the outer rim of a rocks glass with lime. Combine tequila, peach schnapps, lime juice and peach puree in a cocktail shaker with ice. Strain the liquid into a rocks glass and top with ice. Garnish with a peach slice or lime wedge – Tada!

 

Mango & Pineapple Mojito

 

This delightful recipe will turn a tropical twist on a refreshing cocktail cooler. The punchy concoction of mango and pineapple brings vibrant and fruity tastes to pair with every alfresco feasting occasion that you create this summer.

 

You’ll Need:

  • 50g pineapple pieces
  • 50g chopped mango
  • 3 chopped limes
  • 2 tbsp light brown soft sugar
  • Leaves from 2 mint sprigs
  • ice
  • 150ml white rum
  • 200ml pineapple rum
  • 600ml sparkling water

 

Method:

Muddle the pineapple, mango, limes and sugar into a large jug and add the mint leaves, then top with ice. Stir in the liquid including white rum, pineapple rum and sparkling water. Finish with a colourful straw in a pretty glass.

 

Frozen Dark & Stormy

Refresh the traditional Dark and Stormy with a refreshing summer-ready take. The addition of fresh ginger really zaps your tastebuds and the ice makes this a grown-up slushie creation we all didn’t know we needed.

 

You’ll Need:

  • 1 240ml can of ginger beer
  • 1 tbsp. freshly grated ginger
  • Juice of 1 lime
  • Ice
  • 120ml dark rum

 

Method:

Blend together the ginger beer, fresh ginger, lime juice, and ice in an electric processor. Divide the liquid between two glasses and pour a final splash of rum on top!
